Sitroncupcakes med honning

Hei kjære deg!

Lørdag var det full bursdagsfeiring i kollektivet hvilket også medførte en ellevill smaksfest av herligeheter! Mitt bidrag var disse sitronmuffinsene med honning. Altså, sitron i muffins er bare så utrolig godt! Det både lukter godt mens man baker og smaker friskt når de nytes etterpå. En skikkelig forfriskende liten bombe. Disse er superenkle og fryses lett til en senere anledning.

Du trenger:
( Ca. 8 glutenfri muffins)

125 gram glutenfritt mel – 120 gram maismel – 55 gram sukker – 2 ts bakepulver – 1/4 ts xanthangummi – 1 egg – saft og skall fra 1 sitron – 2,5 dl melk – 2 ss flytende honning

Du trenger:
(Ca. 8 vanlig muffins)

2 ts bakepulver – 1 ts vaniljesukker – 3 egg – 4 dl hvetemel – 2 dl sukker – saft og skall fra 1 sitron – 2 ss honning – 2,5 dl melk

Slik gjør du (uavhengig av oppskrift)

1. Forvarm stekeovnen til 180 grader og sett muffinsformene på et stekebrett. Jeg bruke stor muffinsformer.

2. Bland det tørre godt sammen først.

3. Pisk det våte sammen. Rasp skallet av en halv sitron i røren og skvis deretter ut all saften.

4. Lag deretter et krater i midten av det tørre og miks jevnt inn det våte.

5. Fyll røren i muffinsformene, men ikke fyll dem mer enn 2/3 fulle da de hever i ovnen.

6. Stek muffinsene på midterste rille i ca. 20 minutter.

Topping:

Bland 200 gram philadelphia naturell med en halv pakke melis. Rasp skallet av en halv sitron og skvis deretter ut saften. Rør godt til en passe fast konsistens (ikke rennende, da må du ha i mer melis).

Pappas Granola

Hei på deg & hei fredag!

Vinneren får tilsendt denne knasende gode hjemmelagde granolaen. Pappa har alltid laget denne siden jeg var liten og derfor får han æren av navnet. Om du ikke vinner deler jeg oppskriften under så du kan lage den likevel. Crunchy, enkel og billig.

Du trenger:

1 dl hakkede mandler – 2 store never solsikkefrø – en neve sesamfrø – 1 neve revet kokkos – 2 dl havregryn – 1 dl rosiner – en stor sleiv lys honning

Slik gjør du:

1. Bland alle ingredienser i en bolle og tilsett deretter honningen. Miks godt slik at du får en noe klissete konsistens.

2. Fordel granolaen i en langpanne og stek i ovenen på 200 grader i 10-15 minutter. Du vil ha den gyllenbrun.

3. Når du tar ut langpannen er granolaen litt myk fordi den er varm. La den avkjøle seg på benken i 10 minutter før du putter den i et glass eller i en boks.

Fordel granolaen gjerne i fine små syltetøyglass. Perfekt å gi bort hvis du skal i selskap eller nyte sammen med yoghurt til frokost.

Granola har virkelig ingen grenser for ingredienser! Prøv gjerne med gresskarfrø, tranebær, dadler, linfrø, aprikos, cashewnøtter, hasselnøtter eller valnøtter. Du kan også bytte ut honning med sirup eller vanlig sukker. Jeg holder likevel en knapp på honning! Gir en perfekt crunchy konsistens!

Homemade potato tortillas

Hello Saturday!

Alright, first of all; in Norway we call this potato tortilla «lompe». It’s a Norwegian «thing» and we love it so much! Neither Denmark nor Sweden have quite the same. If you go to any gas station and want a hot-dog, you’ll be asked wether you want it with bread or in a «lompe». Lompe is the real thing.

Lomper is a versatile «tool» when making food. Because of it’s neutral taste it can be used both as pizza crust AND for dessert with sugar and jam. Lomper can even be used to make taco-shells! It’s perfect as a quick snack after working out (high-carb) or for lunch with philadelphia, lettuce leaves, cucumber and tomato. Usually we have butter & brown cheese on or butter & sugar. Anyway, use your imagination and let your refrigerator be your only limit. Give this lompe a try!

You need:

5-7 potatoes – 3,5 dl oatmeal flour – a pinch of salt

How to:

1. Peel the potatoes and boil them tender. Mash them and add a pinch of salt and just a splash with milk.

2. Add the oatmeal flour (make your own oatmeal flour by using a hand mixer on the whole oatmeal and mix until fine)

3. Mix together until you have a quite firm dough. Then part them into small portions.

4. Use a rolling pin and roll them flat. I used a bowl to make them perfectly round-shaped.

5. Cook the tortillas until light brown. Do not use any butter or oil. You want them «dry».

Candy- in the name of L.O.V.E.

Hello you,

Happy New Year and all of that to you all! It’s been a busy last semester, but I’m back with new delicious and colorful recipes, so clean your kitchen and roll up your sleeves!

I’ll share with you this super awesome love candy without sugar and made in less than an hour. It’s soon Valentines, so let yourself be inspired.

Love your candy

You need:

1 dl almond flour – 1/2 dl coconut flakes – 2 handful of raisins – two ice-cube trays

Topping:

5 big frozen strawberries – about 1 dl salted cashews – 3 tablespoons whole milk (or coconut milk)

How to:

1. Use a hand mixer and mix the raisins, coconut flakes and almond flour. It should be sticky (that way it’s easy to shape)

2. Press down the sticky mix into the ice-cube tray. Fill the squares only half way as the topping goes on top.

3. Hand mix the strawberries and cashews together with 3 tablespoons of milk. For a better taste use coconut milk. Yummy!

4. Fill the rest of the squares with the topping and smooth out with a spoon. Put the trays in the freezer for about 30 min.

5. Serve together with some hot chocolate, mm!

Cookie time! Oatmeal & banana

Good afternoon lovely people!

In this moment, these delicious cookies I’m about to share with you, are in the oven,- and the whole apartment smells so good! As said before; I’m a fan of easy, cheap and tasty recipes. These cookies only need to consist of two ingredients! They are also egg & milk free. Here is what you need;

(about 8 cookies)

1 ripe banana – 3 dl oatmeal – raisins & goji berries (optional)

Your ingredients

1. Preheat oven to 200 degrees celsius

2. Mash the banana fine and add inn the oatmeal.

3. Optional is to add in raisins, goji berries, maybe some nuts, chocolate, dates. Use your imagination, no limits here. Everything you mix with banana will turn out tasty (at least 90%…)

Place them on non sticky baking paper and let bake in oven for about 10-20 minutes

4. Cook in oven for about 10-20 minutes (depends on how big you make them)

 A perfect & healthy treat for the weekend or even for hiking. I’m going hiking this weekend and these cookies are just waiting on being eaten!

Nana ice cream

Dessert time!

After dinner I usually crave something sweet to make it all complete. I love bananas and I love ice cream. So nana ice cream is just the perfect combination. You need

1 frozen banana – 2 dl coconut milk – 3 dates

1. Mix it all in a blender
2. Put the mix in a box and place in your freezer for 1 hour
3. Take out and make scoops with an ice spoon (I couldn’t wait for 1 hour so mine was like sorbet, but still as delicious and tasty!).
4. Top with o’boy or cocoa powder!

Baby it’s cold outside

Good morning folks,

It’s getting colder in my small town and king of frost (from the fairytales) is soon going to decorate everything with white during the night. For mornings like these nothing is better than a cup of hot chocolate. This warms my hands, head and heart.

Hot chocolate is perfect for cold mornings

Recipe

  • 1 dl coconut milk (light) and 1,5 dl regular skimmed milk (optional; soy milk or almond milk)
  • 1 tablespoon cocoa powder
  • 1 teaspoon kesam vanilla flavor
  • 1 teaspoon honey
  • A dash cinnamon
  • A dash cardamom

I usually buy coconut milk on a can and then pour it into this glass bottle. This way it’s easier to restore in your refrigerator and it will stay fresh for a longer time. Shake well before use

How to

1. Heat the milk and add in cocoa powder, cinnamon and cardamom
2. Right before boiling add in kesam vanilla and honey
3. If you want to be fancy about it; add one scoop of light vanilla ice cream or even a marshmallow or maybe some baked apples
