Let me introduce you to tofu, the vegetarian mystery. Tofu is made of soy and is packed with proteins. It’s very versatile and can be used on pizzas, in stir fry or even in soups. The hard part about tofu, and why it’s a mystery, is how to prepare and cook it. It’s not difficult, but you have to do it right so it doesn’t taste like rubber (the secret is lots of spices!). Follow this easy recipe and you will be surprised how good and easy it is. After being out of town last weekend, this was all I had left in my refrigerator;
1 pack of plain tofu – 2 spelt lomps (optional whole wheat tortillas)- 2 slices with cheese – 1/3 cauliflower – 2 tablespoons of cream cheese (natural)- 1 small piece feta
1. Spread 2 tablespoons of cream cheese on the spelt lomps
2. Chop the tofu into dices and the cauliflower in small pieces
3. Make «curry butter»; put 1 tablespoon of Cocosa Oil (optional olive oil) in a frying pan. When it’s melted add in a dash of smoked paprika, cilantro, cumin, curry and salt. Mix it up and add in the tofu. You want to fry the tofu on quite high heat to make the tofu more firm until they look golden/light brown.
4. While you fry the tofu, preheat oven to 200 celsius. When the tofu is done; fry the cauliflower for about 2 minutes until light brown. Then add the tofu & cauliflower on the pizza. Top with some cheese and feta. Bake in oven for about 10 minutes.
