It’s Friday and so it’s taco time!
I love taco and I can eat it several times a week. I usually eat it with wholegrain tortilla wraps, but this time I thought I’d try something new. I made my own taco shell from «lomper» (this is a Norwegian thing. It looks like small tortillas but it’s made of potato flour). I rarely manage to eat a whole pack before they go bad, so this little twist is perfect when they start to get dry. As I’m going to Oslo for the weekend I didn’t have too many fresh vegetables to put on my taco, but it was still delicious! You need:
Taco: two lomper – chickpeas & whatever vegetables you want
Taco spice mix: smoked pepper – cumin – chili – dried cilantro
1. Make your own taco spice; mix 2 tablespoons of smoked pepper and cumin, 1 tablespoon of cilantro (dried) and a pinch of chili. Add three tablespoons of olive oil into the spice mix and blend.
2. If you have dry chickpeas; put in water over night. If you have fresh ones you can right away pour the spice mix over them. Put the chickpeas in an oven proof dish and put in oven on 200 degrees for about 20 minutes. You want the chickpeas to be roasted.
Hang the lomper over a baking grill and put in oven on 180 degrees celsius for about 10 minutes. Take out when crisp.
Chop whatever vegetables you want and start building your taco tower! We all have our own taco routine and I have to start with the chickpeas and top it all with sour cream and shredded cheese. The taco shells are so crispy and good, and are perfect together with the roasted chickpeas. You just have to try!
