Lunch muffins

Sweet morning to you all,

Muffins. Who doesn’t love muffins? There are so many kinds; blueberry muffins, banana muffins, yellow muffins, carrot muffins.. I made my own little twist as a healthier option as I love them so much. These are lunch muffins and contains no sugar but still has the same consistency, smooth and delicious. The carrot will make them moist and perfectly fresh. You will need;

(4 big lunch muffins)

2 eggs – 1 shredded carrot – 2 dl spelt flourwhole barley (optional) – 1 block feta cheesecupcake forms


Whip two eggs and add in the shredded carrot, spelt flour, whole barley and the feta. Add a pinch of salt and pepper. Portion the batter into your cupcake forms and put in oven for about 10-15 min until light brown on top.





Eat them just as they are, fresh and warm from the oven


Or serve them with cheese and cucumber as I did,- or any other spreads or cheese.
